When we think of sausages, we often think of BBQ and simplicity, but rarely of balance. And yet, with the right herbs, it’s possible to completely transform the plate.
Today, I’m sharing two versions I love: one fresh and light, the other bolder and full of character. Two different vibes, one shared idea: using aromatic herbs to create delicious recipes!
Fresh version: parsley & chives
Here, we’re dialing things down a little.
The bacon and cheddar sausage goes all in. Flavorful, melty, and nicely balanced, it turns any meal into a little guilty pleasure. To balance it out, pair it with something super fresh: a cucumber, fresh tomato, and shallot salad topped with parsley and chives. The result is a dish that still feels indulgent, but much lighter on the palate. The herbs add a freshness that makes all the difference.

Bolder version: cilantro
Here, we do the opposite: we turn up the flavor.
The mild Italian sausages already bring plenty of taste with their spices. Serve them with a bed of roasted vegetables for a warm, caramelized, and deeply comforting touch. But the real game changer is the cilantro sauce!
The herb’s fresh, slightly citrusy character brightens up the whole dish. Blend cilantro, mayonnaise, and feta together to create a wonderfully flavorful sauce that adds the perfect finish to a dish that is rich, intense, aromatic, yet well balanced.
