An outdoor buffet is much more than a simple meal: it is an invitation to share, connect and savour the summer. While flavour remains king, presentation is often what makes guests reach for one bite rather than another. With a few simple principles, you can transform a tapas platter into a true gourmet showcase. Here are three rules that will make all the difference.

1. Create Height

A beautiful presentation naturally draws the eye when it plays with different heights. Too often, bites are simply arranged on a flat platter. Yet adding a little dimension is all it takes to create a much more spectacular effect.

Present your tapas on a raised board, a wood slice or a tiered stand. You can also add height directly to the bites with generous garnishes.

La Fernandière Spicy Italian Sausage Spaghetti Squash Salad is an excellent example. The salad is served directly in the hollowed-out squash shell, instantly creating a focal point on the table. Sun-dried tomatoes, crumbled goat cheese and fresh basil are then added on top to enhance the sense of volume.

2. Echo the Ingredients

A successful presentation already tells part of the recipe’s story. By placing a few recognizable ingredients on top of the dish, you let guests see at a glance which flavours await them.

La Fernandière Mediterranean Sausages served over ktipiti illustrate this perfectly. A few crumbles of feta immediately echo the cheese used in the dip, while fresh sprouts add colour, texture and freshness.

This simple visual cue makes the dish more appetizing and sparks curiosity before the very first bite.

3. Portion Thoughtfully

Good tapas should be easy to enjoy. At first glance, guests should understand how to pick up and eat each bite without hesitation.

Merguez arayes are a perfect example. The meat from La Fernandière Merguez Sausages is mixed with pomegranate molasses and parsley, stuffed into pita bread and pan-grilled. The pitas are then cut into wedges like a pizza, creating natural portions that are easy to eat with your fingers.

For other recipes, adding a toothpick immediately signals how the bite should be enjoyed while also making buffet service easier.

Bonus: Always Add a Touch of Green

If there is one secret that works almost every time, it is adding a touch of greenery. Sprouts, fresh herbs or a few basil leaves instantly create colour contrast and a sense of freshness.

Beyond their visual appeal, these garnishes can also enhance the recipe’s aromas when chosen to complement the flavours of the dish.

By applying these simple principles—creating height, echoing the ingredients, portioning thoughtfully and adding a touch of green—your outdoor buffets will feel both more elegant and more inviting. After all, the tapas that catch the eye are often the first to disappear!
